Flooring in disrepair around fryer area. Using bowls for scoops in flour, sugar, and bread crumbs/COS. Discussed personal use of food storage/labeling and unboxed commercial food labeling. Date marking – 7 days from date prepared if kept at 41ºF (not required if used within 24 hours).
