• Core Items: Seal in disrepair on sliding door ice cream freezer by four-burner stove; excessive frost buildup. Unshielded lights above four-burner stove. Bare wood observed by sandwich prep table. Bare wood below sink in men’s restroom. Counter below pop and coffee machines with formica in disrepair.
Discussed making sure all surfaces are smooth and cleanable, as well as not having fly strips above food.

• Core Items: Improper thawing – chicken and steak thawing in open on backroom table. Cardboard on many shelves and cloth towel on soda cup shelf. No soap at kitchen handsink. No towels at kitchen handsink. Ice scoop handle in ice – COS. Exhaust vent dripping on outside sidewalk. Dumpster lids open. Ice tea uncovered and ingredient tubs uncovered. Bowl (no handle) used for scoop in ingredient tubs. Unshielded lights throughout kitchen and prep areas.

• Core Items: Improper thawing – ground beef and roast stting out in open in back room. Cardboard and tinfoil covering many shelves. Exhaust vent dripping on outside sidewalk. Dumpster lids open. Iced tea uncovered and ingredient tubs in back room uncovered. Bowl used for scoop in ingredient tubs. Unshielded light bulbs.
Discussed no soap and no paper towels at handsink – corrected.
