• Priority Items: Hot dogs at 115ºF – Explained that they need to be cooked to 165ºF then held at 135ºF or above. Applesauce at 71ºF needs to be held at 41ºF or below. Both cooks were out on medical leave so discussed and left info with subs. Also discussed hair restraints.

• Core Items: Condensation from cooling unit dripping on box of beef patties in the walk-in freezer. Unshielded light bulbs in kitchen.

El Patron Mexican Restaurant

401 S. Main

Rock Port, Missouri

• Priority Items: Queso cheese at 128ºF in warmer. Turned up to read 135ºF/monitor with thermometer. Kitchen hand sink is still leaking badly so water turned off. Plumber has been in to look at it and parts ordered to repair/replace. Dishwasher has sanitizer and is working properly.

• Core Items: Bad door gasket on door to walk-in cooler. Cardboard and aluminum foil on shelving. No paper towels at handsink (but it’s currently out of service). Still a few missing floor and mop board tiles. Back hallway has black grime buildup on the floor. Unshielded light in back room – others removed. One booth seat still torn – others repaired.
